I have been trying to find a site that monitors visitor numbers to ski
resorts , or any information to locate the same.
Anyone able to help me in the right direction ?

I cannot help you w/ the rest of the country, but you can get skier
visit numbers for CO at www.skicolorado.com.

In case you were wondering, you can get a custom made ski trail sign
